This post is a little homage to my Dad Antonio. Throughout the years he’s cooked amazing Italian meals so rich and delicious…..well the kind you have to unbutton your pants for! This lovely entree is one of his famous. Thanks Nono for all the yumminess. Here’s to you!


My Dad’s recipe for you (here he uses fettucini)! Happy Weekend || Love you Dad!
Fettuccine al Salmone con Caviar
(serves 4)
2 Tablespoons of Olive Oil Extra Virgin
2 Tablespoons of Butter
2 Medium Shallots
6 Ounces of Smoked Salmon
1 1/2 Cup of Heavy Whipping Cream
3 Tablespoons of Parmesan Cheese
1 Shot of Vodka
1/2 Teaspoon of Nutmeg
Pinch of Salt and White Pepper
4 Teaspoon of Caviar (Optional)
400 Grams of Fresh Fettuccine Pasta
Directions:
Boil water, then add pasta.
Heat olive oil and butter together at medium heat. Saute the shallots. When they turn translucent, then add in the salmon (chopped). Continue to saute for about a minute. Then add the vodka. As soon as the vodka evaporates, then add the cream. Then add the the nutmeg, salt, pepper and cheese; blend together. As soon as the sauce starts to boil, then add the fresh pasta. The dish is ready to serve. When ready to serve put a teaspoon of caviar on top of each dish.
